Since going back to a desk job a few weeks ago, meal prep has become a key element to my weekday sanity. Long gone are the days of leisurely opening the fridge midday to cook up whatever ingredients I had on hand. Now it's all about packing up my lunch container full of healthy dishes and digging into my meal at my desk.
This recipe is a healthy-fied homage to a childhood favorite. Growing up in Korea, there was a chain of fried chicken restaurants, Pelicana Fried Chicken, that made the most glorious spicy fried chicken. It was crispy fried popcorn chicken covered in a bright red spicy sauce.
This post is coming to you a bit later than planned on this Friday morning because I have been sitting at my desk completely paralyzed from being cold. Whenever I make a smoothie in the morning, it gets me so cold that I am unable to move (and obviously too lazy to grab sweatshirt).
This week has been so full of excitement and adventure that writing this blog post feels like the first time all week that I've sat down at the computer for an extended period of time (which is super unusual for me). All the new things that have been happening over here are super fun and exciting so I'm not complaining one bit!
