The other evening, I was sitting on the couch watching tv after dinner and just thought to myself - sweet potato muffins! I've made muffins with all sorts of fruits and vegetables (pumpkin, banana, apple, zucchini, etc.), but why haven't I made them with my absolute favorite vegetable?
Pad Thai is hands down my favorite Thai dish. I love the combination of the savory and nutty flavors intertwined with the springy noodles. Honestly, the first time I tried Thai curry, I was not a fan, but with one bite of Pad Thai, I was totally sold.
Ok, I've said it before, but I LOVE roll cakes. There's just something simply perfect about them that I adore. Also, it really has the perfect cake to frosting (or whipped cream) distribution, which a lot of cakes tend to miss (why I don't love cupcakes).
Dates and nuts have been my go-to snack since starting my Whole30 journey. I KNOW, I KNOW, dates are only meant to be eaten sporadically on Whole30, but it's better than the chocolate I would have reached for otherwise.
